Greek Leek & Feta Pie
Ingredients – serves 4
- 1 onion, sliced
- 50g butter
- 4 tbsp olive oil
- 2 large leeks, chopped
- 1 cup sr flour
- 3 large eggs lightly beaten
- 1 cup Greek yogurt
- 300g feta cheese cubed
- 115g grated Gruyere cheese or parmesan
- 4 tbsp chopped fresh dill
Method
- Saute the onion in the butter and oil until light golden. Add the leeks and cook over a low heat for 10-12 mins until soft. Cool a little.
- Preheat the oven to 180 degrees. Lightly grease a 23cm round springform cake tin. Sift the flour into a bowl. Stir in the eggs, yogurt, feta, leek, onion, dill and season well.
Spoon mixture into tin level top and sprinkle some cheese over the top, bake for 40-45 mins. Cool pie completely before removing from tin. Serve with olive oil drizzled over the top.
