Greek Leek & Feta Pie

Ingredients – serves 4

  • 1 onion, sliced
  • 50g butter
  • 4 tbsp olive oil
  • 2 large leeks, chopped
  • 1 cup sr flour
  • 3 large eggs lightly beaten
  • 1 cup Greek yogurt
  • 300g feta cheese cubed
  • 115g grated Gruyere cheese or parmesan
  • 4 tbsp chopped fresh dill

Method

  1. Saute the onion in the butter and oil until light golden. Add the leeks and cook over a low heat for 10-12 mins until soft. Cool a little.
  2. Preheat the oven to 180 degrees. Lightly grease a 23cm round springform cake tin. Sift the flour into a bowl. Stir in the eggs, yogurt, feta, leek, onion, dill and season well.

Spoon mixture into tin level top and sprinkle some cheese over the top, bake for 40-45 mins. Cool pie completely before removing from tin. Serve with olive oil drizzled over the top.
